Ingredients
- 5 lg. baking potatoes
- water
- 1/4 C (1/8LB) butter or marg
- 1 C milk
- 2 lg onions, chopped
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 4 eggs, lightly beaten
- paprika

Preparation
Step 1
peel potatoes & shred - should have 8C
add enough water to cover potatoes
preventing discoloration until all
are shredded
drain potatoes, saving 1 C of water
heat water, 2 TBL of butter & milk to
just under boiling
pour over potatoes & stir in onion, salt
peppr & eggs
meanwhile, place remaining 2TBL butter in
9x13" baking dish & set in 375 oven
to melt
remove dish from oven & rotate to coat
bottom & sides w/ butter
pour potato mix. into dish & sprinkle
w/ paprika
bake @375, uncovered, until set in
center & edges are browned & crusty
abt 50 min
cut into squares to serve
