Ingredients

  • 1-2 cups of uncooked ham cubed into 1/2 inch sizes.
  • 1 cup of diced onion
  • 1-1 1/2 cups of sliced mushrooms.
  • 2 cups of mini carrots.
  • 2 cups of turnip/rutabaga diced/cubed/sliced. whatever your pleasure.
  • 6-8 potatoes (about size of tennis ball) cut in half.
  • Mrs Dash to taste.

Preparation

Step 1

Saute the the ham, onion and mushroom together until ham is browned and onion and mushroom is soft.

While the ham is browning prepare the turnip/rutabaga, carrots and potatoes. When the ham is browned and onions & mushroom are soft add the carrots and turnip/rutabaga and cook over medium - medium/high heat with just enough water to cover. After about 10 minutes add the potato to the pan. Cook until potato and vegetables are soft. You may need to add water as the Hobo Stew cooks as it will boil off.

Serve while hot, and is really good with home-made Whole Wheat Bread or Tea Biscuits.
