Ingredients

  • For Frosting, beat these ingredients together:
  • 3 eggs
  • 2 cups sugar
  • 1 ½ cups oil
  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 small can of crushed pineapple with juice
  • 2 cups carrots
  • 1 cup chopped pecans
  • 1 sm can flaked coconut (about 1 cup)
  • 1 - 8 oz pkg cream cheese
  • 1 stick butter
  • 1 box powdered sugar
  • 1 tsp vanilla
  • 1 cup chopped pecans (optional)
  • 1 cup crushed pineapple (drained)

Preparation

Step 1

Beat the eggs, sugar, & oil together. Add the flour, baking soda, cinnamon, crushed pineapple with juice, carrots, pecans, & coconut. Beat until mixed well.

Grease or butter & flour a 9" x 13" pan. Pour mixture into pan and bake at 350 for 50-55 minutes.

Let cool and spread frosting on top. Cut into pieces an serve.
