Crunchy Oven-Baked Chicken

Ingredients
- 1 whole chicken, cut-up
- 1/2 stick butter or margerine (4TBL)
- 1 C flour
- 1/2 C yellow cornmeal
- 1 tsp seasoned salt
- 1 TBL pasta sprinkle
- 1 tsp chili powder
- 1/8-1/4 tsp freshly ground pepper
- 1/4 C grated parmesan cheese
- 1 C buttermilk

Preparation
Step 1
preheat oven to 400
line rimmed baking sheet w/ tinfoil
cut butter into pieces, place on baking
sheet & put in oven to melt
watch so it doesn't burn
put flour, cornmeal, seasonings & cheese
in plastic bag shake to mix
pour buttermilk in wide, shallow bowl
dip chicken pieces, one at time into
buttermilk & then place in bag
shake to coat
place chicken on cookie sheet & turn to
coat w/ butter
bake @ 400 for 25 min, skin side up
carefully turn chicken legs & wings so
coating doesn't come off
leave thighs & breast skin side up
bake another 25 min or until cooked
through
large thighs & breasts may need an
extra 10 min or so
just remove smaller pieces & place on
plate on top of stove until larger
ones are finished
the drippings make an excellent topping
for pasta or mashed potatoes
