Crockpot BBQ Chicken

Ingredients
- 4 LB chicken thighs
- 2 lg. onions, cut into 1/4" pieces
- 1-2 cans light beer, warmed
- 1-2 C warm water
- 1 TBL BBQ 3000
- 1-2 TBL olive oil
- 1 med onion, finely chopped
- 3 cloves garlic, minced
- 1 14-oz can diced tomatoes
- 1 C cider vinegar
- 1/4 C worcestershire sauce
- 1/2 C brown sugar
- 1/4 C molasses
- 2 TBL prepared mustard
- 1 TBL prepard horseradish
- 1/4 C lemon juice
- 1/2-1 tsp chnipotle pepper
- 1 TBL reg. chili powder

Preparation
Step 1
line bottom of pot w/ /2 onion slices
wash chicken, pat dry & season w/
BBQ4000
place in crockpot on top of onions
using comboo of lt. beer & water, fil
slow cooker until liquid reaches
2/3 of way up side of chicken (can
use all beer or water or any combo
of 2
STICK W/ LIGHT BEER
cook on low for 8-12 hrs
while chicken cooks, whisk tog. sauce
ingredients
carefully remove chicken from pot (will
be practically falling apart)
allow to rest for abt 20-30 min so it
cools & juices redistribute back
into meat
shred meat w/ 2 forks or just use
fingers
discard skin & bones
completely empty crockpot of fat/liquid
& onions
return met to cooker
whisk sauce again & add enough of sauce
to cover meat
add S & P to taste
reheat chicken on low until hot
serve on hard rolls or buns
