Ingredients

  • One 15-ounce can black beans
  • 1 clove garlic, minced
  • 1 teaspoon cumin
  • 1 1/4 cups nonfat Greek yogurt
  • 1/4 cup minced fresh cilantro
  • 3 tablespoons fresh lime juice, divided
  • 1/2 cup shredded lettuce
  • 1/2 cup shredded cheese
  • 1 1/4 cups chunky salsa
  • One 2-ounce can of sliced black olives
  • 1 medium avocado
  • 1/4 teaspoon salt

Step 1

Drain and rinse the black beans, reserving 1 1/2 tablespoons liquid from beans. Lightly mash them with garlic and cumin.

Spread bean mixture evenly into the bottom of a 9-inch pie plate or a round bowl. In a bowl, stir together yogurt, cilantro and 2 tablespoons of lime juice. Spread on top of beans in a circle, leaving about a inch border. Spread lettuce over the yogurt, then scatter the cheese on top of the lettuce. Follow that with the salsa, the black olives. Mash avocado with salt and remaining 1 tablespoon of lime juice. Place mashed avocado on top, in the middle of all the layers.

Serve immediately, or prepare up until mashing the avocado and refrigerate for two hours before serving.
