  • 15 c. popped corn
  • 2 c. brown sugar
  • 1 c. butter
  • 1/2 c. corn syrup
  • 1 tsp. kosher salt
  • 1 tsp. baking soda

Preparation

Step 1

Preheat oven to 200. Place popped corn in large un-greased roasting pan.

Combine brown sugar, butter, corn syrup and salt in 2 qt. saucepan. Bring to a boil over med. heat, stirring occasionally. Cook for 5 minutes, without stirring. Remove from heat, stir in baking soda and mix well. Mix. will become foamy.

Immediately pour caramel mix over popped corn and quickly toss to coat. Don't expect all the corn to be coated, that will happen during baking.

Bake for 1 hour, stirring every 15 minutes. Remove from oven, immediately turn out of the pan onto a foil lined counter top and break up slightly. Cool. store in tightly covered containers.
