Ingredients
- 1/2 C chopped onion
- 1 med carrot chopped
- 1 celery rib, chopped
- 1/2 tsp minced garlic
- 1 TBL canola oil
- 2 cans (14 1/2-oz each) chicken broth
- 1/3 C uncooked long grain rice
- 3/4 tsp dried basil
- 1/4 tsp pepper
- 3 TBL flour
- 1 can (5-oz) evaporated milk
- 1 pkg (9-oz) frozen diced cooked chicken,
- thawed

Preparation
Step 1
in lg. saucepan, saute onion, carrot
celery & garlic in oil until tender
stir in broth, rice, basil & pepper
bring to boil
reduce heat
cover & simmr for 15 min or until rice
is tender
in sm. bowl, combine flour & milk until
smooth
stir into soup
bring to boil
cook & stir for 2 min or until thickened
stir in chicken
heat through
