Ingredients
- Directions:
- 1 c. butter or margarine, softened
- 3 c. sugar
- 3 eggs
- 1 c. pecans, chopped
- 1 t. vanilla extract
- 1 1/2 t. baking soda
- 1/2 t. baking powder
- 1 1/2 t. cinnamon
- 1/2 t. ground nutmeg
- 1 t. cloves
- 2 c. sweet potatoes, cooked and mashed
- 3 c. all-purpose flour
- ●Preheat oven to 350 F.
- ●Grease and flour 2 loaf pans and set aside.
- ●Cream softened butter and sugar. Beat in eggs one at a time and add vanilla. Add mashed sweet potatoes and mix well.
- ●Sift together dry ingredients and blend with sweet potato mixture. Mix in pecans.
- ●Spread mixture into loaf pans and bake 60-65 minutes.
- ●Remove from oven and let stand 10 minutes.

●Remove bread from pans and cool completely, then wrap in foil or saran wrap and store overnight.
