Creamy Chicken Casserole

Ingredients

• 2/3 C uncooked instant rice
• 1/4 C chopped onion
• 2 tsp butter
• 1/2 C cottage cheese
• 1/3 C french onion dip
• 3 TBL sour cream
• 1/4 tsp salt
• dash white pepper
• 1/2 C cubed cooked chicken
• 1/2 C shredded cheddar cheese
• 2 TBL chopped green chilies

Preparation

Step 1

cook rice according to pkg directions

meanwhile, in sm. skillet, saute onion
in butter until tender
set aside

in sm. bowl, combine cottage cheese,
onion dip, sour cream, S & P

stir in rice & onion

spread 1/2 of rice mix into 3C baking
dish coated w/ cooking spray

layer w/ chicken, 1/4 C cheddar cheese
& green chilies
top w/ remaining rice mix.

sprinkle w/ remaining cheese

bake uncovered @350 min or until bubbly
