Ingredients

  • Method:
  • Recipe One – Egg-less Vanilla Cake
  • 285 grams / 3 cups – Cake Flour
  • 1 1/4 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 170 grams / 3/4 cup – Sugar
  • 115 grams / 1/2 cup Butter (room temperature)
  • 180 grams / 1 Cup Plain Natural Yogurt (beaten)
  • 2 tbsp Milk
  • 2 tsp Vanilla
  • Preheat oven to 180C/350F
  • Grease and line two 8″ baking trays.
  • Sift Flour, Baking Soda, Baking Powder and Salt
  • Cream Butter and half the sugar until light and fluffy – about 3 to 4 minutes.
  • Add Flour, milk and Vanilla.
  • lastly add in the beaten yogurt.
  • Pour into baking tray and bake in the center of the oven for about 18 to 20 minutes or until the skewer inserted in the center comes out clean.
  • Cool on a wire rack before decorating.
  • Recipe Two- Egg-less Vanilla Cake
  • 340 grams / 3 cup – All Purpose flour
  • 325 grams / 1 1/2 cup – Sugar
  • 5 oz or 2/3 cup vegetable Oil
  • 2 tsp Baking soda
  • 2 tsp Vanilla
  • 2 tbsp Vinegar
  • 1 1/2 cups Cold Water.
  • Method:
  • Preheat the oven to 180C/350F
  • Grease and line two 8″ baking pans.
  • Mix sugar and oil until sugar is almost dissolved. Next add in the Vanilla, Cold water.
  • Sift the flour with the baking soda and salt.
  • Combine the wet ingredients into the dry ingredients very slowly to avoid lumps.
  • Once mixed well – add the Vinegar.
  • Immediately pour into baking pans and bake at 180C/350F for about 40 minutes or until the skewer inserted into the center comes out clean.
  • Cool on a wire rack before decorating.
  • I do have one more recipe which contains condense milk but I can’t seem to find it now – will look for it and up date the recipe.

I’ve had quite a few request for Egg-less Vanilla Cake recently, To be honest I do not make egg-less cakes so often any more.

180 grams / 1 Cup Plain Natural Yogurt (beaten)

Preheat oven to 180C/350F

Cream Butter and half the sugar until light and fluffy – about 3 to 4 minutes.

after i add the flour it bacame like dough ,…. so 2tsp of milk vs not enough so i added about 1/4 cup…then after yogurt cake mix vs perfect.But wen i baked cake outter part s very nice but inner part vs sticky…May i know how to get rid of this.

Hi veena, I tried the first recipe. I made 1/4th recipe for trial. After adding given ingredients the batter was still thick.so I increased the amount of milk to 1 tblsn in total. I baked initally for 9 min thinking its a thin layer so shouldn’t take complete time. But The cake needed more 15min. Turned out very nice. Soft n moist. Planning to cover it with fondant…. hope it turns well.. thanks again!
