Ingredients

  • 5-6 pounds Chicken wings and/or thighs
  • (I prefer to use boneless, skinless chicken breasts and thighs)
  • 4 Cups ketchup
  • 1 Jar (11 oz.) Paul Newman Salsa Sauce (Medium)
  • 8 Tablespoons bacon grease or 6 slices finely chopped bacon
  • 1 Cup 80 or 100 Proof Southern Comfort liquor
  • 2 Lemons (juice of 2 lemons)
  • 2 Teaspoons salt
  • 1 Teaspoon chili powder
  • 2/3 Cup brown sugar
  • 2 Medium onions finely chopped

Step 1

Directions for Chicken:

1. Rince chicken and pat dry. For wings, cut off and discard wing tips. Cut each wing at the joint to make 2 sections.

2. Arrange chicken pieces in a single layer in an ungreased baking pan.

3 Bake for 25 minutes at 375 degrees. Drain fat from the pan,.


Directions for Barbecue Sauce:

1. Lightly brown onion in bacon grease or cook with chopped bacon. Remove from heat.

2. Mix together and add ketchup and Salsa sauce to onions and bacon.

3. Add Southern Comfort and stir well.

4. Add juice from 2 lemons, salt, chili powder, and brown sugar. Stir and mix well.

5. Simmer slowly for about 10-15 minutes. Stir occasionally.

6. Pour barbecue sauce on top of cooked chicken.

Note: I add the cooked chicken to a 6 qt. crock pot and then pour the barbecue sauce over that. Leave on low heat so chicken really gets the flavor of the sauce. I love it!
