Rice Pilaf

Growing up my son, Christopher, would not leave the babysitter's home if she was making Rice Pilaf. She was kind enough to share her recipe and we've been making it for over 40 years now! Better than what you get in most restaurants and so easy to make.

I usually DOUBLE the recipe because it's that good and reheats easily.

Ingredients

  • 1/2 Cup Orzo macaroni
  • 1/2 Stick butter or margerine
  • 1-2 Drops of olive oil
  • 1 Can (13 oz.) College Inn chicken broth
  • 1 Cup Uncle Ben's Long-grain rice

Step 1

1. Melt butter on low heat with 1-2 drops of Olive Oil.

2. Add Orzo. Stir occasionally until Orzo is darker in color (don't burn it)

3. Add rice. Stir until rice becomes clear and transparent. This happens fairly quickly.

4. Add chicken broth

5. Add less than 1/4 can of water in with the chicken broth.

6. Stir, cover, and simmer until liquid is all absorbed.

If cooked on a low heat this should take about 20-30 minutes.

Note: I've prepared this dish and about 5 minutes before it's finished cooking I will add pre-cooked broccoli, peas, carrots, onions, mushrooms, chopped red pepper ... whtever you'd like to add to give it color.
