Ingredients

  • 1 Cup Minute Rice (uncooked)
  • 1 Pound 93% fat free ground beef
  • 1 Egg (Slightly beaten)
  • 2 Tablespoons grated onion
  • 2 Teaspoons salt
  • 1 Dash of pepper
  • 1 Bottle Tomato Juice
  • 1/2 Teaspoon sugar

Preparation

Step 1

1. Combine all ingredients except tomato juice and sugar.
2. Add 1/2 cup tomato juice to meat mixture.
3. Shape into balls and place in a large skillet.
4. Add sugar to remaining tomato juice in the bottle. Shake well.
5. Pour tomato juice over meatballs.
6. Bring to boil
7. Reduce heat and simmer covered about 15 minutes, basting occassionally.

Serves 6 (3 each)
