White Chocolate Macadamia Nut Cheesecake Bars

Ingredients
- 4 ounces melted butter
- 1/2 cup confectioner's sugar
- 1 cup flour
- 1 pound cream cheese, softened
- 14 ounces white chocolate, chopped (divided use)
- 2 eggs
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon rind
- 1 teaspoon vanilla
- 1 cup coarsely chopped macadamia nuts
- 60 small chocolate decorations

Preparation
Step 1
Preheat oven to 350 degrees. Mix butter, confectioners' sugar and flour to form a dough. Press evenly into the base of a 9 x 12 baking pan. Bake for 15 to 20 minutes or until lightly browned.
While crust bakes, prepare filling. In bowl of mixer or food processor, beat cream cheese. Melt 8 ounces of white chocolate in a microwave for 1 minute on high (100 percent power). Add to cream cheese along with eggs and sugar. Pulse or beat just until smooth. Add flavorings and pulse again.
Sprinkle macadamia nuts evenly over the cookie base. Spoon on cream cheese mixture smoothing evenly over nuts. Bake for 25 additional minutes, until very lightly browned.
Chop remaining 6 ounces of white chocolate. Remove pan from oven and sprinkle white chocolate over the cheesecake. Allow to melt, then smooth with knife. Allow to set, then decorate with chocolate decorations. Cut into squares. Makes about 60 small squares.
