Ingredients
- 1/2 medium green cabbage, shredded
- 1 large carrot, shredded
- 1/2 cup mayonnaise
- 2 Tbsp sugar
- 2 Tbsp lemon juice
- salt to taste
- 1 tsp horseradish

Step 1
Wash cabbage; cut into small wedges; remove core. Wash and pare carrot. In processor, shred cabbage a few wedges at a time. Remove to bowl. Shred carrot; add to cabbage.
Make dressing: In a smaller bowl, combine mayonnaise and rest of dressing ingredients; mix well. Add to shredded vegetables. Toss vegetables with dressing to coat well. Refrigerate, covered, until well chilled - several hours or overnight. To serve, garnish with chopped parsley, if desired.
