Ingredients

  • 4 lbs. green tomatoes
  • 6 green peppers
  • 2 lbs. small white onions
  • 4 to 6 tbsp. whole mixed pickled spices (to taste)
  • vinegar
  • 1 1/2 cups brown sugar

Preparation

Step 1

Slice tomatoes, peppers and onions. Put a layer of each in crock until all are used, sprinkling each layer with a good bit of salt. Cover, put weight on them and let stand over night. Drain off liquid, put in a large kettle and cover with vinegar. Add sugar and spices. Bring to boiling point and boil 2 minutes. Let stand until cool. Put in jars and seal.
