Ingredients
- 2 lbs red new potatoes, boiled, cooled under cold water, diced
- 1/4 C chopped scallions
- 1/4 C roasted red peppers, diced
- 1/2 C sour cream
- 2 Tbl mayonnaise
- 1 C shredded Cheddar cheese
- Garlic powder to taste
- Salt and pepper to taste

Preparation
Step 1
Place diced potatoes into large mixing bowl. Add scallions and peppers, then sour cream and mayonnaise, gently mixing. Fold in cheese and season to taste with garlic, slat and pepper.
Place in sealable container and store in refrigerator overnight.
Makes 12 servings.
