Line baking sheets with parchment paper. Set aside. Heat butter and brown sugar in saucepan over med heat. Stirring frequently with a wooden spoon, until butter is melted and mixture is smooth. Stir in oats, flour, salt, egg and vanilla. Drop cookie batter by tsp onto prepared sheets, leaving about 2" between each cookie. Bake for 5-7 mins. Should be golden brown. Allow to cool on cookie sheet for 30 sec, remove to racks.
