Festive Sausage Cups

Ingredients
- 48 slices white bread
- 1 tbsp butter
- 1 pound sausage
- 2 tbsp butter
- 6 green onions; chopped
- 3/4 tsp salt
- 1/2 cup chopped mushrooms
- 1/4 tsp pepper
- 1/4 cup thinly sliced olives
- 2 cups whipping cream
- 1/4 cup Parmesan cheese

Step 1
Cups: Pre-heat oven to 400 degrees. Lightly butter muffin tins. With 2 ½” or 3” biscuit cutter slice bread in circles and rollout to flatten. Press circles in tins (48 cups). Bake until lightly brown – 6 minutes. Remove from tins and cool. Place on baking sheet for filling.
Filling: Pre-heat oven to 350 degrees. Brown sausage, breaking with a fork. Pour off drippings and drain on paper towels. In same skillet melt 2 tbsp butter and cook green onions until tender, about 3 minutes. Add mushrooms, olives, salt and pepper. Sprinkle with flour, stirring constantly. Pour in cream and bring to a boil. Add sausage. Reduce heat and simmer until thickened; about 10 minutes. Fill cups with sausage mixture, discard any oil. Sprinkle with Parmesan cheese.
Bake 10 minutes and serve hot.
