Ingredients
- 2 1/4 cups plain flour
- 1 tblsp sugar
- 1/2 cup freshly grated parmesan cheese
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3 oz fresh flat leaf parsley, finely chopped
- 2 sprig of fresh thyme, finely chopped
- 4 fresh sage leaves, finely chopped
- 1 cup plus 2 tblsp milk
- 1/4 cup plus 1 tblsp butter, melted
- 1 large egg

Preparation
Step 1
1. Preheat the oven to 400. Line a muffin tin with cupcake cases.
2. Sift the flour, salt, baking powder, and baking soda into a large bowl. Add the chopped herbs and cheese and stir well in another bowl. Lightly whisk together the milk, butter, and egg. Then add to the dry ingredients. Stir just enough to combine the ingredients and ignore the lumps.
3. Spoon the mix into the prepared cases, and bake in the oven for 15 -20 minutes until firm to the touch and golden.
