This is super - like weiners and beans - even I like it and it's super easy to throw together in the morning as long as you remember to soak the beans the night before.

Update - 13/02/11 - great again, used turkey kielbasa this time - I think I personally preferred the sausages but this was still really good (and really easy)

Update - 04/04/12 - served over brown basmati rice (1/2 rice cooker cup (6 tablespoons) is plenty for both of us) best yet, we both love it this way! Bet Freekeh would be great too.

Ingredients

  • Serves 6
  • 1 cup chicken broth
  • 1 1/2 tbsp. tomato paste
  • 1 1/2 tbsp. Splenda brown
  • 1 tbsp. molasses
  • 1 tbsp. honey mustard
  • 1 tbsp. Montreal steak spice paste
  • 2 cloves garlic, minced
  • 1 large jalapeno, minced
  • 6 ounces dry navy beans, rinsed and picked over, soaked overnight
  • 1/2 small onion, finely minced
  • 2 - 3 links PC Smokies (Maple or Plain) cut into chunks OR 2 links Tarini's Jalapeno and Cheddar smokies
  • 2 tsp. cider or red wine vinegar
  • 1 tsp. Worcestershire sauce

Preparation

Step 1

Whisk the broth, 1 cup water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans, onions and bay leaf. Tuck the sausages into the beans in the slow cooker. Cover and cook on high for one hour, then reduce heat to low and cook until the beans are tender, about 8 or 9 hours longer.

Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.)
