Ingredients

  • 3 T olive oil
  • 1 large onion, minced
  • 3 garlic cloves, minced
  • 1 t tumeric
  • 1/2 t ginger
  • 1/2 t cumin
  • salt and pepper
  • juice of one lemon (3-4 T)
  • lemon zest from one lemon
  • 6 C turkey or chicken stock
  • 1/2-1 C barley - more will be thicker
  • 2 C chopped turkey/chicken
  • 1/4 C chopped fresh parsley
  • 1/4 chopped fresh cilantro

Assemble all ingredients in saucepan and cook for 2 hours or until barley is soft.
