Ingredients
- 1 egg
- 1 C white corn meal
- 1 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 3/4 C buttermilk
- 1/2 tsp sugar

Preparation
Step 1
mix all tog. batter should not be too
thick - if too thick, add more milk
if too runny add little more corn meal
het oven to 450
put abt. 1/2 tsp shortening in each
section of muffin tin
heat tin, very hot, but remove from oven
before shortening smokes
add muffin batter to hot tin
put into oven
bake 10 min
move to top of oven near end to brown top
of muffins
when brown, remove from oven
turn each baked muffin on its side &
leave in tin until ready to serve
serve w/ butter
