Ingredients
- 3 tbsp olive oil
- 1 small onion, thinly sliced
- 1 garlic clove, thinly sliced
- 1 tbsp oregano
- salt and pepper
- 2 medium carrots, sliced diagonally 1/8 inch thick
- 1 medium zucchini, sliced 1/8 inch thick
- 1 medium potato, sliced 1/8 inch thick

Preparation
Step 1
Preheat oven to 425 degrees. Drizzle i tbsp oil in shallow 2 quart baking dish or 9 inch square baking dish. Add onion, garlic and oregano and toss to coat. Season with salt and pepper.
Arrange rest of vegetables over onion mixture, alternating each kind, and overlapping each. Drizzle with 1 tbsp oil and season well. Cover with parchment then foil. Roast for 20 minutes. Uncover, then drizzle with rest of oil and roast, basting with pan juices every 10 minutes, until light gold, about 25 minutes.
