Fish Tacos

Dad suggested that Lucia knew what she was talking about when she shared this recipe --- perfect for leftover cooked fish, especially grilled fish. Serve them with refried beans and sour cream.

Ingredients
- 1 medium onion, chopped
- 2 green bell peppers, chopped
- 1 clove garlic, minced
- 1 jalapeno pepper, chopped and seeded
- 2 tbsp. bacon fat or olive oil
- 3 tomatoes, peeled, seeded and diced
- salt, chili powder, ground cumin, a pinch of each or more to taste
- 1 lb. cooked fish, in chunks
- juice of 1 lime
- sliced avocado
- sour cream
- 8 taco shells
- cilantro for garnish

Step 1
In heavy skillet, sauté the onions, peppers, and garlic in the bacon fat. Cook over medium heat until the onions are translucent and soft.
Add the tomatoes and seasonings. Cook for about 10 minutes or until the sauce starts to thicken.
Add the fish and lime juice and cook about 2 minutes, or until heated through.
Spoon into taco shells and garnish with avocado, cilantro, and sour cream.
