Mint Cookies and Cream Football Rice Krispie Treats

Ingredients
- 2 Tablespoons butter
- 3 cups miniature marshmallows
- 2 1/2 cups Rice Krispie cereal
- 1 cup crushed mint Oreo cookies
- 1/2 cup Andes mint chips
- 1 1/2 teaspoons shortening, divided
- 1/4 cup white chocolate chips

Step 1
Place the butter and marshmallows in a large saucepan. Heat over low-medium heat until melted.
Stir in the cereal until completely mixed. Add the cookie crumbs and stir in. Press firmly into a buttered 8x8 dish. Let cool completely.
Use a football shaped cookie cutter to cut 12 footballs out. (For the last one, you may have to press a few of the scraps together.)
Place the Andes mint chips and 1 teaspoon shortening in a microwave safe bowl. Heat for 1 minute. Stir until melted. Dip the tops of each football in the melted chocolate. Let set.
Place the white chips and 1/2 teaspoon shortening in another bowl. Heat for 1 minute. Stir until melted. Let cool slightly. Spoon into a small plastic bag and cut a small tip off. Pipe laces onto each football. Let set. Store in a sealed container on the counter.
Yield: 12 rice krispie treats
