Skirt Steak with Pepita Sauce

Ingredients
- 1 1/2 pounds skirt steak
- kosher salt and pepper
- 6 inch flour tortillas
- 1/2 red onion, finely chopped
- 1/2 cup fresh cilantro
- 1/4 cup pepitas (hulled & roasted pumpkin seeds)
- 2 Tablespoons olive oil
- 2 Tablespoons fresh lime juice

Step 1
1. Heat broiler. Season steak with 1/2 teaspoon each salt and pepper, and place on a rimeed broilerproof baking sheet. Broil to the desired doneness, 3-4 minutes per side for medium rare. Let rest at least 5 minutes before slicing.
2. Warm the tortillas according to the package directions.
3. Meanwhile, in a medium bowl, combine the onion, cilantro, pepitas, oil, lime juice and 1/4 teaspoon each salt and pepper. Serve the the steak and tortillas.
