Ingredients

  • 1.5 lbs Pork tenderloin
  • 1/4 Cup butter
  • 1 Tbsp lemon juice
  • Grated leamon rind
  • 1/2 tsp tabasco
  • 3 Tbsp graded onion
  • 3 tsp brown sugar
  • 1 tsp coriander
  • 1/2 ground cumin
  • 1 ./4 tsp ginger
  • 1 clove garlic, crushed
  • 1/2 cup Ketjap
  • salt and pepper
  • small 8" wooden skewers

Preparation

Step 1

Cut pork tenderloin into 3/4" cubes and place in shallow dish. Melt butter in saucepan and add remaining ingredients. Bring to a boil and simmer 5 minutes. Pour over meat, cover and leave overnight in frige. Turn the meat peridically (butter wil congeal but don't worry). Removed meat from marinade (reserve) and put 5 - 6 pieces on each skewer. Grill on Bar-B-Que from 15 minutes or unitl done (don't overcook)
turn frequently. Reheat marinade and poor over meat. Set on a platter in a bed of rice
