Tommy's Buttermilk Flapjacks

Ingredients
- 2cups2 cups flour
- 4tbsp.4 tbsp. granulated sugar
- 4tsp.4 tsp. baking powder
- 1tsp.1 tsp. baking soda
- 1tsp.1 tsp. fine salt
- 2cups2 cups buttermilk
- 4tbsp.4 tbsp. melted butter
- 1tsp.1 tsp. vanilla extract
- 22 beaten eggs

Step 1
1. Put flour, sugar, baking powder, baking soda, and salt into a large bowl and whisk to combine; set aside.
2. Whisk together buttermilk, butter, vanilla, and eggs in a medium bowl. Pour the buttermilk mixture into the flour mixture and whisk together until just combined to make a thick batter. (For tenderer flapjacks, don't overmix the batter.) Let batter rest 10 min. Stir and adjust batter with buttermilk if desired.
3. Heat your favorite flapjack nonstick skillet over medium heat. Add 2 tsp oil, when oil starts to shimmer wipe lightly with paper towel. Ladle in about 1⁄2 cup of the batter. Cook the flapjack, turning once, until deep golden brown on both sides, about 5 minutes total. Transfer to a large plate; keep warm in a 200deg oven. Repeat process. Serve hot, topped with butter and maple syrup and a dusting of confectioners' sugar.
Best pancake recipe. I sour 2 cups of milk(whole) with 2 tablespoons white vinegar or lemon juice, let sit while you assemble the rest of the ingredients. Use 1 cup cake flour & 1 cup whole wheat flour, have also added blueberries.
