Ingredients

  • 5 slices bacon, cooked and crumbled
  • 1 (24-oz.) package “Steam and Mash” frozen potatoes
  • 2/3 cup half and half
  • 2 tablespoons unsalted butter
  • 4 ounces low fat cream cheese, softened
  • 1/2 cup low fat sour cream
  • 2 teaspoons dried chives
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 cup shredded low fat Cheddar cheese

Preparation

Step 1

If you haven’t already done so, cook and crumble bacon. Lightly grease an oven-proof serving bowl.
Prepare potatoes according to package directions; transfer to a mixing bowl; add half and half and butter; mash. Stir in sour cream, dried chives, salt, pepper and garlic powder. Transfer mixture to the serving bowl and top with the shredded cheese and crumbled bacon. Cover with plastic wrap and refrigerate for up to 24 hours before serving.
To serve, preheat oven to 350 degrees. Remove plastic wrap and bake for 25 minutes or until heated through.
