Ingredients

  • 2 (16-oz.) packages frozen green beans
  • 1 cup crumbled Bleu cheese
  • 1 cup thinly sliced red onion
  • 1/4 cup olive oil
  • 3 tablespoons white wine vinegar
  • 2 teaspoons Dijon mustard
  • Salt and pepper, to taste

Preparation

Step 1

Cook green beans according to package directions; drain and cool; place in a large zipper-topped plastic bag; seal and refrigerate for up to 24 hours before serving.
In a large serving bowl, combine green beans, Bleu cheese and red onion. Cover with plastic wrap and refrigerate for up to 4 hours before serving.
In a sealable container, combine olive oil, vinegar, mustard, salt and pepper; seal and shake well; refrigerate for up to 4 hours before use. To serve, shake well, pour over salad and toss to coat.
