Ingredients

  • 2 Tbsp olive oil
  • 3 onions,coarsely chopped
  • 3 leeks,trimmed,thinly sliced
  • 4 each potatoes,carrots,peeled and diced
  • 2 cloves garlic,minced
  • 3 cups thinly sliced cabage
  • 7 cupsb chicken broth
  • 1 bay leaf
  • 8 oz.piece smoked ham
  • 4 oz chunk chorizo or other spicy sausage
  • 19 oz.can tomatoes undrained
  • 19 oz.can kidney beans cans,drained and rinsed
  • 1/2 cup elbow Marcaroni
  • 1/2 cup chopped fresh parsley
  • salt and pepper

Preparation

Step 1

In large saucepan,heat oil over medium heat,cook onions,leeks for 10 min.stirring often.Stir in potatoes,carrots,garlic,cabbage.Add broth,bay leaf,ham,chorizo,bring to boil.Reduce heat,cover.Simmer for 45 min.Remove ham and chorizo,dice and return to pot.Add tomatoes,kidney beans,breaking up tomatoes.Cover and simmer for 10 min.Add macaroni,simmer till dente.Discard bay leaf.Stir in parsley,salt and pepper to taste.
