Ingredients
- 1/2 cup butter
- 1 cup sugar, divided
- 3 eggs, separated
- 1 tbsp. vanilla extract
- 1 cup sour cream
- 2 cups flour
- 3 tbsp. poppy seed
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. cream of tartar
- 3/4 cup raspberries

Step 1
Preheat oven to 375F. Butter 12 large muffin tin.
Using electric mixer, beat butter til light and fluffy. Add egg yolks, one at a time. Stir in vanilla extract and sour cream until combined.
In a separate bowl, mix flour, poppy seeds, baking soda, baking powder and salt. Stir dry ingredients into egg yolk mixture.
In a third bowl, combine egg whites with cream of tartar and remaining suger. Using an electric mixer, beat until soft peaks form. Fold egg whites into egg yolk mixture. Spoon the batter into prepared muffin tins. Place a few raspberries over batter and push into mixture.
Bake 20 to 25 min.. Remove from oven and cool on rack for 10 min. before removing from tin
