  • 1/4 cup honey
  • 1 lime, zest finely grated
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 cups buttermilk
  • 2 eggs
  • 4 tablespoons (1/2 stick) butter, melted, plus more for cooking pancakes
  • 1 tablespoon honey
