Ingredients
- 4 tablespoons (1/2 stick) butter, softened
- 1/4 cup honey
- 1 lime, zest finely grated
- 1 1/2 cups all-purpose flour
- 1/2 cup whole-wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 cups buttermilk
- 2 eggs
- 4 tablespoons (1/2 stick) butter, melted, plus more for cooking pancakes
- 1 tablespoon honey

Preparation
Step 1
Whisk the butter, the honey, and lime zest in a bowl until smooth, or pulse to combine them in a mini food processor. Refrigerate until ready to serve with the pancakes.
