Ingredients

  • 1 1/2 cup mayonnaise
  • 1 (4-oz) jar dice pimento, drained
  • 1 tsp Worcestershire sauce
  • 1 tsp finely grated onion
  • 1/4 tsp ground red pepper
  • 1 cup pecans, chopped
  • 1 (8-oz) block Extra Sharp Cheddar Cheese
  • 1 (8-oz) block Sharp Cheddar Cheese

Preparation

Step 1

1. Preheat oven to 350 degrees. Bake chopped pecans in a single layer, in a shallow pan, for 8-10 minutes or until toasted and fragrant. Stir halfway through to ensure even browning. Set aside.

2. Stir together mayo, diced pimiento, worcestershire sauce, onion, and red pepper in a large bowl.

3. Using the small side of a box grater, finely shred the extras-sharp cheddar cheese.

4. Using the large side of the grater, coarsely shred the sharp cheddar cheese.

5. Add the pecans and shredded cheese to the mayo mixture and stir until blended.

(Note: Use fresh cheese .. it makes a difference)

Serve with celery sticks and assorted crackers, or make a grilled pimiento cheese sandwich in a skillet a panini press.
