Tortellini Chili Mac

Ingredients

- 1 large yellow onion, diced
- 1 red or green bell pepper, diced
- 2 cloves minced garlic
- salt and pepper
- 1 pound ground beef
- 1 tablespoon chili powder
- 1 teaspoon oregano, preferably Mexican
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 2 cans Ro-tel diced green chiles and tomatoes
- 1 can (14 ounce) cannellini beans, drained and rinsed
- 8 ounces cheese tortellini
- 1 cup (or more) shredded sharp cheddar, plus more for serving
- sour cream
- snipped green onions

Preparation
Step 1
In a Dutch oven or large, heavy duty saucepan heat a couple tablespoons olive oil over medium - low heat. Add the onion, pepper and garlic, cook until tender, stirring often about 8 - 10 minutes.
Turn the heat up to medium and add the ground beef, breaking it apart as it cooks.
When the ground beef is cooked through turn off the heat, tip the pan and scoop out the grease.
Put it back on medium-low heat and mix in ¾ teaspoon salt, ¼ teaspoon black pepper, chili powder, oregano, cumin and paprika.
Mix in the Ro-tel including the juices and the cannellini beans. Cook 25 minutes, stirring often.
Cook the tortellini separately, according to package directions in plenty of salted water to al dente.
Drain and mix into the chili along with the cheese.
Serve with a sprinkle of cheddar, a dollop of sour cream and green onions.
