Ingredients
- Whisk Together:
- 1 1/2 cups sugar
- 3/4 cup sweetened shredded coconut
- 1/2 cup buttermilk
- 1/2 cup unsweetened coconut milk
- 1 tbsp. flour
- 2 eggs
- 2 egg yolks
- 1/2 tsp. vanilla
- Minced zest and juice of 1 lime
- Pinch of salt

Preparation
Step 1
Pour into a 9" unbaked pie shell and place on a baking sheet.
Bake until filling is set, yet still a bit jiggly. 40-50 minutes.
Remove from oven and cool to room temperature then chill of not serving right away. If chilled, let pie stand at room temperature for at least 15 minutes before serving.
