Ingredients
- 1 C cooked, mashed carrots
- sugar
- 2 t cinnamon
- juice and grated rind of 1 lemon
- 1/2 c flaked coconut
- 1 c ground walnuts
- 1 c light seedless raisins (optional)
- 1 1/4 c oil
- 4 eggs beaten
- 2 t vanilla
- 1/2 c warm water
- 5 c flour
- 2 tsp baking powder
- honey

Preparation
Step 1
Combine carrots, 1/2 c sugar, cinnamon, lemon juice & rind, raisins, coconut, walnuts and 1/4 c oil. Mix 1 2/3 c sugar, eggs, vanilla, remaining oil and water in bowl. Sift flour with baking powder and stir into the egg mixture. Roll out on a floured board and cut into small squares. Place 1 t carrot mix on each square and fold to make a triangle. Seal edges. Place on greased baking sheet. Bake at 350 for 25 min. Pour small amount of honey over hote cookies and turn to coat all sides.
