Easy Peanut Butter Fudge

Ingredients
- 1/2 cup peanut butter
- 2/3 cup powdered sugar
- 1/3 cup butter
- 3 cups sugar
- 1 cup evaporated milk
- 1 (10-oz.) bag mini marshmallows
- 1 cup chocolate chips
- 8 ounces semi-sweet baking chocolate
- 1 ounce unsweetened baking chocolate
- 1 teaspoon vanilla
- 2/3 cup peanuts

Preparation
Step 1
Line a 9- x13-inch pan with aluminum foil wrap; lightly grease with oil.
In a mixing bowl, combine peanut butter and powdered sugar until well blended.
Divide mixture into 24 one-inch portions; roll into balls and place balls on prepared pan.
In a large saucepan over medium-low heat, stir together butter, sugar and evaporated milk until sugar is dissolved. Raise heat and bring to a boil. Stir constantly for 3 minutes then remove from heat.
Stir 3 cups of marshmallows into the saucepan and continue to stir until marshmallows have melted. Add chocolate chips, semi-sweet and unsweetened baking chocolate and vanilla. Continue to stir until chocolate has melted and is incorporated into mixture. Pour chocolate mixture over peanut butter balls in prepared pan. Top with peanuts and remaining marshmallows.
Allow fudge to cool for about 90 minutes then cut into 48 equal pieces.
