Ingredients
- 1 tbsp. oil
- 1 dozen eggs, beaten
- 1 round loaf sourdough bread
- 12 oz. pkg. baby spinach
- 12 oz. pkg. crumbled feta cheese
- 8 oz. can sliced mushrooms, drained
- 1 lb. ground pork breakfast sausage, cooked and drained

Preparation
Step 1
Heat oil in a large skillet over medium heat. Add eggs, cook and stir until set. Hollow out inside of loaf, leaving approximately one inch of crust around the outside. Save bread pieces for another recipe. Layer half the spinach inside the bread loaf. Top spinach with half the feta cheese and all the mushrooms. Layer on sausage, scrambled eggs, remaining feta cheese and spinach. Place top back on loaf to cover and wrap tightly with aluminum foil. Bake at 375 degrees for approximately 45 minutes. Slice and serve hot.
