Ingredients
- 4 large sheets phyllo pastry dough
- 1 tablespoon olive oil
- 2 salmon fillets
- 1 1/4 cups tomato sauce

Preparation
Step 1
Preheat oven to 400 degrees. Light grease baking sheet.
Lay one sheet phyllo dough out on counter top. Brush with olive oil and then cover with one more sheet of dough.
Center salmon fillet near the bottom edge of dough. Top with a couple of spoonfuls of tomato sauce and spread evenly on top of fish.
Roll fish and dough up. Brush with olive oil as needed to seal edges and keep dough pliable.
Repeat process with remaining phyllo dough and salmon fillet.
Place wrapped salmon on baking sheet. Bake for about 10-15 minutes or until dough has puffed and turned golden brown.
While fish is baking, warm remaining tomato sauce.
Remove fish from oven and serve with warmed sauce.
