  • 1 cup (150g) green split peas
  • 4 cups (960ml) vegetable stock or water
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons freshly grated ginger
  • 2 large tomatoes, diced
  • 1 cup (133g) sweet potatoes, chopped
  • 1 cup (244g) tomato sauce
  • 1/2 cup (129g) peanut butter
  • 1/2 cup (33g) collard greens leafs or kale, roughly chopped
  • 1 1/2 teaspoon sea salt or to

Preparation

Step 1

Sort and wash split peas and place in a large pot along with water. Bring to boil on medium heat, cover pot and lower to simmer. Cook for 40 minutes until peas are soft. Add onion, garlic, ginger, tomatoes and sweet potatoes. Cook for 10-15 minutes until potatoes are tender. Remove 1 cup of liquid and mix with peanut butter to form a thick sauce, return to pot along with tomato sauce, collard greens and salt.
Cook for 5 minutes, stirring constantly for flavors to blend
