Ingredients
- 2 tablespoons butter
- 4 ounces pineapple chunks in juice, drained (reserve juice if not using rum)
- 3 tablespoons rum (or use pineapple juice and 1 teaspoon rum extract)
- 1 1/4 cups heavy cream, chilled

Preparation
Step 1
In a skillet over medium-high heat, melt butter.
Add pineapple. Stir and continue to cook until pineapple begins to brown.
Add rum and allow liquid to come to a low boil. Remove from heat and set aside.
In a mixing bowl, place heavy cream and whip with beaters until cream forms soft peaks.
Fold pineapple and pan juices into whipped cream. Spoon mixture into serving glasses such as parfait or wine goblets and serve.
