Fruity Rice Salad

Ingredients
- 1/2 cup raisins
- 1/2 cup dried apricots
- 1 1/2 cups cooked brown rice
- 3/4 cup seedless red grapes
- 3/4 cup toasted chopped walnuts
- 4 green onions, chopped
- 1/2 cup chopped chives
- 1/4 cup chopped parsley
- Juice of 1 lemon
- 5 tablespoons olive oil
- 2 teaspoons honey
- 2 teaspoons chopped fresh mint
- Salt to taste
- Ground pepper to taste

Preparation
Step 1
Combine raisins and apricots in a bowl. Cover with boiling water and let sit until softened and plump. Drain and transfer to a salad bowl. Add rice, grapes, walnuts, green onions, chives and parsley; mix well.
In small bowl, whisk together lemon juice, oil, honey and mint. Add to rice mixture; toss gently. Add salt and pepper.
