Cornbread for Ray

• 2 Tbs. butter, softened
• 1/2 c. sugar
• 1 egg
• 1 c. buttermilk
• 3/4 c. cornmeal
• 1 1/4 c. flour
• 1/2 tsp. baking soda
• 1 tsp. baking powder
• 1 tsp. salt

Preparation

Step 1

Cream butter and sugar. Add egg, buttermilk and corn meal, beating well.

Combine dry ingredients. Add to batter; mix well. Pour into greased and floured 8-inch square pan.

Bake at 400 degrees for 25 minutes.
