Ingredients

  • 3 Tbs. brown sugar
  • 1 Tbs. sour cream
  • 1/2 c. broken pecans
  • 3 ripe bananas
  • 1 egg
  • 1/2 c. sugar
  • 1/4 c. oil
  • 1 1/4 c. flour
  • 2 tsp. baking powder
  • 1/4 c. salt

Preparation

Step 1

Preheat oven to 400 degrees. Mix the brown sugar, nuts, and sour cream. Set aside.

Mash the bananas; add the egg, sugar, and oil. Mix well. Stir in the dry ingredients and combine until just moistened. Spoon into mini-muffin tins and top with a small bit of the brown sugar mixture.

Bake for 12 minutes. Serve warm.
