Apricot Scones with Devonshire Cream

Ingredients
- Devonshire Cream:
- 2 c. flour
- 1/4 c. sugar
- 1 Tbs. baking powder
- 1/4 tsp. salt
- 1/3 c. cold butter
- 1/2 c. chopped dried apricots
- 1/2 c. chopped pecans (optional)
- 1 tsp. grated orange peel
- 1 c. plus 2 Tbs. whipping cream, divided
- 3 oz. cream cheese, softened
- 1 1/2 Tbs. powdered sugar
- 1/2 tsp. vanilla
- Enough cream for a spreadable consistency (about 1/4 c.)

Preparation
Step 1
Combine dry ingredients in a bowl. Cut in cold butter until mixture resembles crumbs. Add apricots, nuts, and orange peel. Stir in 1 c. cream until just blended. Turn out on countertop and knead until just smooth--5-6 times. Pat out until about 1" thick; cut into squares. Brush with remaining 2 Tbs. cream. Bake in a preheated 375 degree oven for around 12-15 minutes.
Devonshire Cream:
Blend first three ingredients until smooth. Add cream gradually.
