Mama's Buttermilk Pancakes

The best pancakes I've ever had. We like them very light (use a thin batter), but if you like heavier pancakes, add a little more flour.

Ingredients
- 1 egg
- 1 t. salt
- 2 T. sugar
- 2 T. vegetable or canola oil
- 1 t. soda
- 1 cup buttermilk
- Enough sifted flour to make a thin batter (1/2 to 1 cup)

Step 1
In a large bowl, beat egg with a whisk. Add salt, sugar, oil and soda. Beat together, then add buttermilk. Sift flour a little at a time and mix until batter is of pouring consistency. If it gets too thick, thin to proper consistency with additional buttermilk.
Cook on lightly greased griddle (heated until a drop of water bubbles). Turn when air bubbles appear over surface of pancake. Cook an additional minute, or until done, and serve. Do not overcook.
