Ingredients

  • 1 tsp vanilla
  • 1 cup walnuts
  • 4 eggs (beaten together in separate bowl)
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 1/2 cups unsifted all purpose flour
  • 1 1/2 tsp baking soda
  • 3/4 tsp baking bowder
  • 1 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 cups grated zucchini (not pared)

Preparation

Step 1

Chop nuts into medium sized pieces
Beat eggs, add sugar, then oil
Combine dry ingredients, add to first mixture alternately with zucchini
Stir in walnuts and vanilla
Grease and lightly flour pans (2 small or 1 large loaf pan).

Bake @ 325 degrees for 1 hour or until toothpick inserted comes out clean.
